Merry, merry eggnog

I admit it. I have never made homemade eggnog until today. Oh, how I have wasted my money on the store-bought stuff. My batch of homemade eggnog is so good I want to weep with joy.

The other good thing is that it’s not even bad for you. I tweaked a Cooking Light recipe and made it g-free by substituting corn starch for flour to thicken it. I also left out the booze and will let people add it if they want it.

Here’re what you need: 4 cups low-fat milk, 1/2 cup sweetened condensed milk, 1 tbsp corn starch, 1/4 tsp grated whole nutmeg, 1/8 tsp salt, 3 large egg yolks and 1 tbsp g-free vanilla. The bourbon and brandy are optional.

Here’s what you do: Combine the milk, condensed milk, cornstarch, nutmeg and salt in a pan. Whisk while you bring to a boil.

Separate three eggs and put the yolks in a medium bowl. Add 1/3 of the hot mixture to the eggs while whisking. Put the egg mixture in the pan with the remaining milk. Cook for another minute or so to continue thickening while whisking.

Chill and serve topped with more freshly grated nutmeg and the booze if you want it.
